Easy Avocado Dips


I made these 2 easy avocado dips for my event a few weeks back and they went down a storm! So I'm sharing the recipes with you all to try out. And avocado is all the rage these days. These dips are perfect to serve with crackers and veggie sticks as a snack and they go brilliantly on chilli, tortilla chips, salad...the list goes on!

Avocado Salsa

Ingredients:

1 avocado

2 tomatoes, diced and seeds removed

1 handful of coriander, finely chopped

Juice of 1 lime

1-2 tbsp olive oil

Method:

  • First up, how to deal with an avocado.

  • Slice the avocado down the centre, lengthways and around the stone.

  • Hold either half and twist until they separate.

  • To remove the stone, drive the blade of the knife into it- carefully! Twist the knife and the stone should come out easily.

  • Next make cuts in the flesh, first down and then across, to create small diced pieces. Scoop out the pieces with a spoon.

  • Add these to a bowl with the diced tomato and coriander.

  • Add the juice, oil and seasoning and mix well.

  • Keep well covered and in the fridge- best eaten ASAP.

Creamy avocado dip

Ingredients:

2 avocados

1-2 heaped tbsp. natural yogurt

1 large handful coriander

Juice of a lime

Method:

  • Add all the ingredients to the bowl of a food processor with salt and pepper and blitz until smooth.

  • If you don't have a food processor, use a stick blender instead. Remember to chop the coriander if doing this.

  • Garnish with more coriander and serve.

Notes:

Adjust seasoning and lime juice to suit your tastes.

Keep well covered as the avocado goes brown. Make sure to mix well after storing in the fridge to freshen.
