Easy Veggie Burger Recipe

Who doesn't love a burger every now and then? Especially when it is as easy to make and tasty as this one. And bonus- these ones are veggie filled!

Why not give em a go for meal prep lunches or for a meat-free dinner this week?

Here's what you need and how to do it:


2 small/1 large sweet potato

1/2 can chickpeas, drained & washed

Juice of 1/2 lemon

1 tbsp soy sauce/tamari

1 tsp cumin

1 tsp corriander

1/2 tsp paprika

2 cloves garlic, crushed


  1. Preheat the oven to 180.

  2. Peel and cube the sweet potato.

  3. Put the potato on a baking tray with some oil and season with salt and pepper. Place in the oven and bake for 20-25 minutes or until soft.

  4. Put the remaining ingredients in a large bowl and mash or blitz together.

  5. When to sweet potato is cooked, add that to the bowl and mash/blitz.

  6. Separate the mixture into 4 and form into a burger shape.

  7. Optional: Coat the burgers in sesame seeds for some crunch.

  8. Cook on a tray in the oven for 8-10 minutes each side or in a frying pan for around 5 minutes each side (or until warmed through).

  9. Serve on a bun or in a pitta bread with salad/salsa/natural yogurt/cheese or anything else that takes your fancy!


  • If you'd rather, you can make them smaller so they are more like falafel- make 8 instead of 4 and cook for a shorter duration.

  • Add chili or herbs (mint and coriander are good!) to suit your tastes.

  • Add diced onion or sliced spring onion to the mix before the potato for some crunch.

  • These would also be yummy with a salad or in a wrap too!
