Who doesn't love a burger every now and then? Especially when it is as easy to make and tasty as this one. And bonus- these ones are veggie filled!
Why not give em a go for meal prep lunches or for a meat-free dinner this week?
Here's what you need and how to do it:
2 small/1 large sweet potato
1/2 can chickpeas, drained & washed
Juice of 1/2 lemon
1 tbsp soy sauce/tamari
1 tsp cumin
1 tsp corriander
1/2 tsp paprika
2 cloves garlic, crushed
Preheat the oven to 180.
Peel and cube the sweet potato.
Put the potato on a baking tray with some oil and season with salt and pepper. Place in the oven and bake for 20-25 minutes or until soft.
Put the remaining ingredients in a large bowl and mash or blitz together.
When to sweet potato is cooked, add that to the bowl and mash/blitz.
Separate the mixture into 4 and form into a burger shape.
Optional: Coat the burgers in sesame seeds for some crunch.
Cook on a tray in the oven for 8-10 minutes each side or in a frying pan for around 5 minutes each side (or until warmed through).
Serve on a bun or in a pitta bread with salad/salsa/natural yogurt/cheese or anything else that takes your fancy!
If you'd rather, you can make them smaller so they are more like falafel- make 8 instead of 4 and cook for a shorter duration.
Add chili or herbs (mint and coriander are good!) to suit your tastes.
Add diced onion or sliced spring onion to the mix before the potato for some crunch.
These would also be yummy with a salad or in a wrap too!
