Savoury rice is a bit of an old school recipe, but it is really quick and easy, and reheats well= perfect for midweek dinner and leftover lunches! .
I love it on it's own, but it also works as a side dish, or you could mix in some cooked meat or tofu 😋
Ingredients: (serves 4-5 as a side dish)
1 onion, diced
1 pepper, diced
1 punnet mushrooms, sliced
300g rice (long grain or basmati)
2 tbsp curry powder
1L veggie stock
Heat a little oil in a pan and fry off the onion + peppers until they start to soften.
Add in the curry powder and rice. Cook for around a minute, stirring all the time. Make sure the rice is all coated in oil and curry powder.
Add in the mushrooms and stock.
Bring to a boil.
Cook for 15 minutes, stirring regularly, until rice is tender.
Stir through cooked meat, chickpeas or tofu to make a complete meal, or serve as a side dish.
Use other vegetables, or omit some of the options I've used here. Courgette, grated carrot, frozen peas and sweetcorn would all work in this. Use what you have and what your family enjoy.
